In the summer you're busy-shuttling the kids to camp, taking off to the beach or a park for the day. Breakfast sometimes needs to be something that you can just grab and go, but you also want it to fill up those tummies. These mini frittatas fit the bill perfectly-not only are they super tasty, but you can grab them and go, supplementing with a bit of fruit or slice of bread. Make them ahead of time and tuck into the fridge when you have a busy couple of days ahead!

Roasting the potatoes takes longer but adds a lot of flavour. You could, if you wish, use leftover boiled potatoes and cut them into bite sized bits to speed up the process. Egg creations allow you to cut back on the fat and cholesterol in the dish without sacrificing any taste. If you prefer to use whole eggs, try using about 6-8  eggs and increasing the 2 Tbsp of milk listed in the recipe to 1/4 cup.

Ingredients

1 carton of Egg Creations 

2 Tbsp milk or half and half

4 slices of bacon, cooked and chopped

2 medium sized Yukon gold potatoes

1 Tbsp olive oil

1 green onion, sliced finely

1 cup crumbled feta cheese

salt and pepper


Directions

1. Pre-heat the oven to 400 F. Peel the potatoes and cut them evenly into 1/2 inch dice. Toss the potato pieces with olive oil, salt and pepper and place them on a large baking sheet in the oven to roast for about 40 minutes, stirring and tossing them every 10 minutes or so. When they are browned and tender remove from the oven and let cool.

2. Turn the oven down to 350 F. Grease muffin cups in your muffin tin well. You can use a spray or rub them with butter. Divide the cooled, cooked potatoes amoung 12 cups. Sprinkle with bacon, green onion, and cheese.

3. In a glass measuring cup, mix the eggs with half and half, about 1/4 tsp pepper and a pinch of salt. Divide the egg mixture among each cup.

4. Bake the frittatas about 15-18 minutes, until firmly set. Take the pan from the oven and set on the counter to cool. To remove the fritattas, run a butter knife around the edge of each. An offset spatula makes it easy to remove them from the cups.
