Meringue and Yogurt Parfaits

Fancy pavlova but don't want to make a large dessert? Crumble meringue 'cookies' in the bottom of a serving dish, top with your favourite Greek yogurt, and then whatever seasonal fruit you have available. The combinations are endless! You could even add chocolate curls to be decadent, or granola to be a little on the healthier side. Either way, it's a great way to end a meal or a fun snack for the kids to make.

Creamy greek yogurt, meringue and fresh fruit

Ingredients

mini meringues, either baked yourself or bought

2 cups your favourite yogurt ( like Greek mango)

1 1/2 cups fresh raspberries

3 kiwi fruit

2 bananas


Directions:

1. Peel and slice the kiwi, banana, and pick over the raspberries. Set aside.

2. Crumble meringues in the bottom of a serving dishes. Spoon about 1/3 cup of yogurt over top.

3. Top each parfait with 1/2 kiwi, 1/4 banana (sliced) and 1/4 cup fresh raspberries
