Combine the best of both worlds with these savory pancake coated bacon slices cooked to golden brown perfection. Salty and sweet (especially if you add maple syrup), they are the perfect dipper for a creamy yellow yolk. Speed things along by cooking up the bacon the night before you intend to make them, and you'll be good to go come morning!

Salty sweet goodness to dip in a creamy yolk

Ingredients

1 1/2 cups flour

1 1/2 tsp baking powder

1 tsp salt

1/2 cup vegetable oil

1 1/4 cups milk

2 eggs

1 tbsp vanilla

15 slices of cooked bacon, dabbed well with paper towel to remove excess grease


Directions

1. In a large bowl, whisk together the flour, sugar, salt, and baking powder. Make a well in the center, then set the bowl aside.

2. In a separate bowl, whisk together eggs, milk, oil, and vanilla until well combined. Dump the mixture into the well in the dry ingredients. Mix with a whisk until combined, but you still have a few lumps.

3. Brush a non stick pan or skillet with a small amount of vegetable oil. Heat the pan over medium or electric pancake griddle at 350F until hot.

4. Dunk a piece of bacon in the pancake batter, turning and being sure to coat it thickly before immediately placing it on the pan. Continue with the remaining pieces of bacon, depending on the size of your griddle.

5. Watch the bacon dippers carefully. When they are golden brown on the bottom and the edges look cooked w/ bubbles, flip them over and cook the other side until golden brown.

6. Remove to a plate and dip in your softboiled egg!
