Forget about egg salads that are dripping in high fat mayonnaise, this one is creamy and delicious from healthy mashed avocado and plain yogurt. Eat it alone with chips, stuff it into a pita, or make yourself a good old fashioned egg salad sandwich. Use a good sturdy bread; one that can stand up to the moisture of the egg salad, and then layer in whatever greens you like. Try peppery arugula, pea shoots, or baby spinach and if you're really adventurous, fold a little cooked and crumbled bacon into the egg salad.

This makes only 1 sandwich with some filling leftover, but you could make the filling and serve it with crackers to some kids for a great snack as well. Double to make 2 or 3 sandwiches.

Ingredients

1 hard boiled egg

1 hard boiled egg white

1 avocado

1 tbsp plain yogurt

1/2 green onion minced

1/2 tsp dijon mustard

freshly squeezed lime juice to taste


Directions

1. In a medium bowl, mash up the avocado coarsely. Mix with yogurt, dijon, lime juice and green onions.

2. Chop up the egg coarsely. Gently fold the egg in with the avocado mixture. Add salt and pepper to taste.

3. When making a sandwich, use a heavier bread and layer with crisp lettuce.

**Optional: Try adding a bit of crumbled cooked bacon for an extra special touch!**
